  • Whole catfish baked in the oven

Preheat the oven to 200ºC.

Rinse the fish, remove the intestines and rinse the inside again. Remove the excess water with paper towels. Take a piece of aluminum foil and spread it over a baking sheet. Lay several slices of lemon and several sprigs of aromatic spicy herbs like thyme or rosemary over the lemon.

Take the fish body and make several diagonal cuts on either side of the body. The cuts should not ruin the body. They just let the heat get deep easily and shorted the cooking time. Sprinkle the body with some salt and olive oil. Place the body over the lemon and herbs. Then, add some salt and lemon into the empty belly of the fish. Finally, place several lemon slices on the side of the fish that’s facing up.

Finally, wrap the foil around the fish body in such a way that the juices that flow out of it while baking stayed inside. Place the wrapped fish onto a baking sheet and leave in the preheated oven for about 30 minutes. This is a regular cooking time for an average fish weighing about 2 or 2 ½ pounds.
